Whole Wheat Cottage Cheese Pancakes



Ok, so I fell in love last fall. Yes, it was with someone that I didn't know, or hadn't met. I fell in love with the Pioneer Woman. She made the best food, with the most beautiful pictures of that food. It was all so irresistable, that I was, unable to resist. But after months of sitting at her websites feet, the effects started to show, yes on my backside. It was getting bigger. And Bigger!! Then it happened. My 5 year old came to me and said the dreaded words. "Mommy, I don't like it that you are so fat". Yes, the love affair would have to end. My days of kneading dough, and making maple frosting would have to come to an end. I spent time mourning the loss of my new love... I checked myself into PW rehab, also known as Judy Thureson's boot camp. And I sadly gave up all my white sugar and white flour. Resolved to be destined to live the life without such pleasurable foods as homemade pizza, which by the way it took 5 years for me to perfect my recipe, I started to lose a bit of weight.



But then I started to happen upon something new all together!! Almonds!!! And cottage cheese. I know what you are thinking... she's lost her mind. These foods are ok, but they can't replace homemade pizza. Well, your right, but did you know you can blend them down and use them as substitutes in your food, making whole wheat pizza, or blending the cottage cheese and putting it in pancakes??



So here if my journey. I love to bake. I once dreamed of being a pastry chef. I even went to look at the school. If you ask any of my friends, they know, i LOVE TO BAKE!!!! So now here's my challenge. To bake with healthier options and keep my rear out of my peripheral vision!!!



Here is today's Recipe:





Whole Wheat Cottage Cheese Pancakes:





  • 1 cup whole wheat flour

  • 1/2 cup corn meal

  • 3 Tb turbinado sugar

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup greek yogurt

  • 3/4 cup cottage cheese

  • 2 eggs

  • 4 Tb melted butter (i wanted to try and substitute applesause but didn't have any)


Mix dry ingredients.

Blend cottage cheese down to think by smooth texture.

Mix wet ingredients.

Add together.



You can add 3/4 cup blueberries to this. I make about 6 pancakes plain then add the blueberries, as Josh doensn't like them but Jordan and Jacob do. And Josh eats more.



Drizzle very small amount of agave on them and enjoy!!!!
